Morcón is a type of chorizo, aged from 5 to 6 months, typical of the regions of Andalusia and Extremadura and the province of Salamanca. The meat with which it is made is usually lean without much fat content and that the meat is stuffed into a larger section of pork intestine.
A tapas favourite, to serve our Morcón Iberico de Bellota Premium allow the sausage to come up to room temperature for 30 minutes, just like a bottle of good wine! At the ideal serving temperature of 20 degrees celsius the rich aromas and oils are fully released.
Morcón Iberico de Bellota is best served on its own with crusty bread and a good glass of red wine. However it also works well paired with a rocket salad and Manchego shavings.
